Have you ever been to Disneyland? They make these delicious cashew caramel bears that can be found in Pooh Corner and other candy stores. I’m hooked and every time I go, I have to stop and buy about sevenTEEN of these little babies. Since I don’t get to Disneyland every year, I decided to make my own. These are perfect treats to take to neighbors and friends for the holidays. Read below.
Materials needed:
-a box wrapped in linen
-tissue paper
-milk chocolate chips
-evaporated milk
-Kraft caramels
-unsalted cashews
-cookie sheet covered in wax paper
Melt 1/2 of your chocolate chips and spread out in small circles on wax paper. Let cool. I placed my cookie sheet outside so the chocolate would set faster. In a small microwaveable bowl, melt caramels and 1/3 cup of evaporated milk. Stir every 30 seconds. Once the first layer of chocolate is set, drop a spoonful of melted caramel on top. Sprinkle with cashews. Let set. Melt second 1/2 of chocolate chips and spread on top of each circle. Let set and then package.
I wrapped a few boxes in linen and then filled with caramel-colored tissue paper. These are such easy holiday treats. I’m ashamed to say I had an undisclosed amount before giving these to our neighbors. I pray you have more self control than I do.

You never put an amount on the ingredients. It would be great if you could give me a ballpark idea so I can keep the chocolate and caramel amounts in balance. I wanted to make this for Easter.

Hi Risa! For each turtle, I would pour use 1/4th-1/8th of a cup of melted chocolate first, wait for it to set, then add two spoonfuls of caramel on top, wait for that to set, and then finish with another 1/8th cup of melted chocolate! If you add nuts, just put as many as you desire into the caramel before the last layer of chocolate. The beauty of these turtles is that they’re easy to customize to your tastes! Hope that helps!
