It’s been a while since my last post for Autumn Appetite! Can you believe that it’s almost Thanksgiving?! The time is just flyin’ by. Sheesh! Now that it’s fall/winter, we’re packing on the pounds to keep us warm. We work hard every summer to drop a few pounds so that we can gain it all back in the fall. I just love to eat and don’t want to worry about calories when there is cake or some other form of sugar around. Logan has been bugging me for the last two years (no joke. 700 days) to make these pumpkin bars. They’re so ridiculously easy that I don’t know why I haven’t. They take two minutes to whip up and two second to devour a whole pan. Ready yourselves.
Healthy Pumpkin Bars
- 1 box Spice cake mix
- 1 14 oz. pumpkin puree
- as many chocolate chips as you want
- a splash of vegetable oil
Those are the ingredients. That’s it. Mix it all together. Pour the batter in a greased 9×13 pan and bake for 20-25 minutes at 350 F. It takes less than 30 minutes to get your house smelling like a giant pumpkin! Who doesn’t love that?
If you want to go cuh-razy, and I know you do, you can add a little powdered sugar glaze over the top. Just give it a little drizzle and call it a day. Mix a splash of milk into a little powdered sugar and stir well. You want the mixture to be a bit runny so that it will dribble drizzle like Michael Jordan. Holy moly. That’s all I can say.

You can definitely eat these! And you should! I made another pan yesterday. The bars are gone. Not even a crumb in sight…
