Guys. I’ve been eating a lot of popcorn lately. It’s air popped and pretty dry. And honestly? It hasn’t been satisfying my diabetic taste buds. (Nothing can. Whomp whomp.) I’ve been trying to figure out small ways to spice and/or sweeten it up. So welcome to Popcorn Week. Now, I can’t go crazy, but that doesn’t mean you shouldn’t. Each day, I’ve got a tasty recipe or craft involving popcorn and they’re delicious and cute and appearances are really all that matters. Right? So let’s make some pop rocks popcorn, mmmmkay? It’s too good.
I know. I know. To me, the idea sounded a little gross at first. But lemmetellyou, the bowl is empty and after only one afternoon. It’s grown on me.
I think it’s the popping sensation. Mixed with the sweetness of the chocolate. It just works. And don’t judge, but I let Vita try out the pop rocks and it was the funniest thing I’ve seen all August. She loved ’em!
Supplies:
- 1/2 c popcorn kernels
- 1 c white chocolate (melted)
- pop rocks in assorted flavors (I used bubblegum, strawberry, and tropical punch)
And it goes like this:
Pop the popcorn. Place in a large bowl and set aside. In a small microwaveable bowl, melt the white chocolate. Once melted, gently stir the white chocolate over the popcorn. Spread out on a sheet of wax paper and wait a few minutes for the chocolate to set.
Now devour like your life depends on it. That’s how we eat all our meals in the Ward household.
