Welp, you guys. I made these last weekend and they have pretty much taken over my life. When you make these, and I beg you to, your house will smell so delish it will hurt. They’re a little time consuming (only 1 hour and 20 min.), so make them while watching a movie. Maybe you should make them this week while you catch up on the Twilight films before the 4th one comes out on Friday. Oh! Make them and then bring them to the movie with you! I don’t care if you think those movies are cheesy. They are. But they’re still fun to watch.
Cinnamon & Sugar Toasted Almonds
Ingredients:
9 c. raw almonds
3 egg whites
3 tsp. vanilla
1 tsp. water
1 ½ c. white sugar
1 ½ c. brown sugar
3 tsp. ground cinnamon
1 tsp. salt
Preheat oven to 250 degrees F. Cover two large cookie sheets with parchment paper.
In a medium- sized bowl, combine sugars, cinnamon, and salt and set aside. In a separate large bowl, beat egg whites until foamy. Add vanilla and water and beat a little more. Add almonds and toss until thoroughly coated. Sprinkle sugar and cinnamon mixture over almonds and toss.
Divide almonds evenly among cookie sheets. Bake one cookie sheet at a time for 1 hour and 15-20 minutes stirring every 20 minutes.
**Try not to devour too quickly… you’ll burn your tongue. 🙂
