We moved. In order for me to keep my sanity, I have a few friends sharing some quality creations with you while we settle in. Today’s baller is Lizzy from Sugar + Butter and she’s sharing the ultimate in Easter treats! Hit it, Lizzy.
Hey Properites (I worked on that for, like, 15 minutes.) my name is Lizzy, creator of Sugar + Butter. It’s been a long, long time since I’ve been here – since the pretzel strawberry icebox pie of fate and wonder. This colorful Easter cake is basically a standard white cake but with a little surprise in the middle. The sky is the limit in terms of colors! So let’s do this, shall we?
INGREDIENTS
for the cake
- 2 1/4 cups all-purpose flour
- 1 cup milk at room temperature
- 6 large egg whites at room temperature
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 1 3/4 cups granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon table salt
- 1 1/2 sticks unsalted butter, softened
Heat oven to 350 degrees. Prepare three 8-inch cake pans.
Make sure milk and eggs are room temperature.
Pour milk, egg whites, and extracts into medium bowl and mix with fork until blended.
Mix flour, sugar, baking powder, and salt in bowl of electric mixer at slow speed. Add butter, cut into cubes and continue beating on low for about 1-2 minutes.
Add all but 1/2 cup of milk mixture to flour mixture and beat at medium speed for 1 1/2 minutes. Add remaining 1/2 cup of milk mixture and beat for about 1 minute.
Pour about 1 1/4 cup of the batter into a bowl and add your choice of food color, I chose magenta. Split the remaining batter into two 8 inch pans and the colored batter into a third pan.
Bake until toothpick inserted in the center comes out clean, 27 to 30 minutes.
Wait until all your layers cool and assemble your cake!
In order to get this sprinkle affect, I pressed small handfuls of sprinkles against the bottom edge of the cake before the frosting set. Then using a pair of tweezers, place each sprinkles a little bit further apart the further up the cake you get.
