GUYS. Guys. Guys. Guys. Guys. Guys. It’s a pretty strange thing, but I haven’t always loved pineapple. Don’t get me wrong. I LOVE the flavor, but it was always a texture thing for me. (I’m like that with many, many fruits.) I drink piña coladas with the best of them, but always tossed the fruit to someone who cared. I’ve grown up. I’ve tasted the fruit of life and it is good! It’s great! And now I can usually be found cooking with all the fruits. We most recently came up with this baked pineapple donuts recipe to try and combine two of my faves: donuts and pineapples. Game = changed.
Baked Pineapple Donuts Recipe
INGREDIENTS:
- 1 box yellow cake mix
- 2 eggs
- 3/4 cups pineapple juice
- 1/3 cup vegetable oil
- chopped pineapple bits (optional)
GLAZE
- 2 cups confectioner sugar
- 2 tablespoons milk
- yellow food coloring
- splash of pineapple extract (optional)
- shredded coconut and sliced pineapple (for toppings)
TO MAKE
In the bowl of a standing mixer, combine the cake mix, eggs, pineapple juice, and oil. Pour into a greased donut pan. Bake at 350 for 8-10 minutes. Remove from the oven and allow to cool on a wire rack.
To make the glaze, combine the powdered sugar, milk, food coloring, and extract. Beat on high until well mixed. The mixture should be runny, but mostly thick. Drizzle several coats over the cooled donuts.
Once the donuts are covered in the glaze, add the toppings!
Sprinkle each with shredded coconut, and place a wedge of pineapple in the center. I also took some pineapple leaves to make these “edgy” donuts. Ones that don’t want to conform.
Oh heavens. I wish I had more of these on a plate next to me right now as I type!
Serve with a selection of pineapple surroundings!
They’re baked, so you needn’t feel like you are cheating on your diet. (What diet, right?) The fruit basically cancels out the “bad-for-you” rep that donuts get. So we can enjoy a baked pineapple donut every morning! Donut lovers unite!
